This Baisakhi, treat your taste buds to a delectable meal of Sarson ka saag and Makke di roti

Nothing like some finger-licking good food to celebrate a new start.

The first day of the Punjabi new year, Vaisakhi - also known as the spring harvest festival- is celebrated by visits to the Gurudwara and processions during the day.

The day, that is called Baisakhi in some parts of the country, also marks the beginning of the solar year, and involves feasting with family and friends.

And since no celebration is complete without scrumptious food, we got Hilton Bangalore Embassy GolfLinks's executive chef Anand Kumar to dish out his secret recipe for a wholesome meal of Sarson ka saag and Makke di roti.


Sarson da saag

Ingredients

Spinach (washed and finely chopped): 1 bunch
Mustard greens (washed and finely chopped): 1 bunch
Chopped green chilies: 2
Salt: To taste

Ghee: 2 to 3 tbsp
Chopped onion: 1 large
Chopped ginger: 1 tbsp
Chopped garlic: 1 tbsp
Chopped coriander: 1 tsp
Cumin seeds: 1 tsp
Garam masala: 1 teaspoon
Lemon juice: 1 tbsp

Bengal gram flour or maize flour: 1 tbsp
Unsalted butter: 1 tsp

Method:

- In a medium pot, mix spinach, mustard greens, green chilies, and salt. Add a cup of water and boil until cooked
- Mash the greens and mix well to make a coarse paste
- In another pan, heat ghee on a medium flame. Once hot, add grated onion and fry until it turns a pale golden colour
- Add remaining ingredients and fry until oil separates from the masala (onion-spice mix)
- Add the greens to this and stir until fully blended
- Garnish with a dollop of butter and serve with Makke di roti

Sarson-da-saag-and--Makke-d

Makke di roti

Ingredients
Makai aata: 1½ cups
Finely chopped coriander leaves: 2 tbsp
Carom seeds ( Ajwain): 1 tsp
Warm water: To bind the dough
Salt: To taste
Oil or Ghee: For shallow frying

Method
- Sieve the maize flour in a large bowl
- Add finely chopped coriander leaves, carom seeds, and salt
- Pour in warm water little by little and knead a little stiff and smooth dough
- Divide it into 6 equal portions
- Wet your palms with few drops of water and make round shaped balls from each portion
- Take a plastic zip lock bag and cut it from two sides
- Place the bag over a rolling board and put one ball over it. Simultaneously, start heating the tawa over medium flame
- Press the dough ball a little with your palms and flatten it. Cover it with a side of the plastic bag and gently roll it out into medium thick round shaped roti
- Cook on tawa and serve hot

On this day, Guru Gobind Singh, the tenth Guru of Sikhs, asked people to follow Sikhism in 1699, and the Khalsa community was formed.

The northern states of Punjab, Haryana and parts of Delhi celebrate this day with much fanfare. People get together, and perform bhangda and gidda on traditional folk songs and dhol. Men show off their gatka skills (traditional form of martial-arts of the Sikh.)

The Sikh community also observes it as the day of thanksgiving for abundant harvest, and pray for future prosperity.

This year, Vishu will fall on April 14.

The festival of lights and fireworks is celebrated in Kerala, and parts of Karnataka. People decorate their houses with diyas and lights, and burst firecrackers (locally called Vishupadakkam). The traditions of Vishu include the first auspicious view of the festive day (called Vishukkani Kazhcha), buying of new clothes for the occasion (called Puthukodi), giving money which is the first gift of the year (called Vishukkaineetam) and the feast consisted of food items that taste salty, sweet, sour and bitter (called Sadya).

The ritual arrangement (called Vishukkani) made on this auspicious day in the prayer room of the house includes a list of items that bring prosperity - rice, fruits, vegetables, betel leaves, arecanut, metal mirror, yellow flowers (called konna), holy texts and coins. The items are arranged a night before Vishu and is the first sight of Lord Vishnu on Vishu.

Devotees throng the Sabarimala Ayyappan and the Guruvayur temples to see the 'Vishukkani Kazhcha' during the Brahma Muhurtha, around 3.30 am.

Observed on April 15, 2018, Bohag Bihu is the widely celebrated across Assam, and parts of Manipur and Bengal. The Assamese celebrate Bihu thrice a year, which signify the distinct cycles of farming - Bhogali/Magh Bihu (January), Bohag/Rongali Bihu (April), and Kongali Bihu (October).
